Recipe of the Month
Grilled & Glazed Pork & Pineapple Kabobs
Serves - Four Prep Time - 10 to 15 minutes
Cook Time - 10 to 15 minutes
Ingredients:
Two pork tenderloins, cut into 1" - 2" pieces
1 sweet onion, cut into 1" - 2" pieces
One fresh Pineapple, cut into 1" - 2" pieces
¼ cup fresh scallions, white only, chopped fine
Pork Seasoning:
Kosher salt & fresh cracked black pepper
Olive oil
Glaze:
1 ½ cups Hoisin sauce
2 cups Pineapple juice
2 tbls Rice vinegar
2 tsps Sesame oil
1 tsps Brown sugar
Directions:
Pre-heat grill on high
While the grill is heating, place the first four glaze ingredients into a saucepan and stir, bring just to a simmer. Do not boil the ingredients! Simmer, stirring frequently, until reduced to the consistency of a light syrup. Remove from the heat and add the brown sugar until it dissolves.
On a serving plate make a bed of your favorite rice, top with grilled pork, onions & pineapple, drizzle glaze over dish and top with scallions
